Zucchini Fritters (GF/V)



1 large zucchini, grated
1/2 tsp sea salt
2 garlic cloves
1/2 cup chickpea flour
1 flax + chia egg (1 tbsp ground flaxseed + 1 tbsp chia seed in water)
1/2 tsp onion powder
1/2 tsp black pepper

Blend all ingredients in a food processor. Heat a pan over medium heat with 1 tsp coconut oil. Scoop the mixture out and onto the pan. Let cook for 3-5 minutes or until golden brown, then slip over to other side. Repeat. 

Cashew sauce

1 cup raw cashews
½ cup water
Lemon juice from half lemon
2 tbsp nutritional yeast
1 tsp garlic powder
Pinch of sea salt

Blend all ingredients in a food processor.
