Healthy Oreo Sandwiches (GF/V)

Yes your dreams have come true!

Healthy oreo cheesecake sandwiches... I still don't really know what to call them but they are out of this world!

Sweetened with dates, and full of healthy fats, these guilt-free treats are perfect to satisfy a sweet tooth, just be sure to keep them cool!



Crust: 1/2 cup walnuts, 1 tbsp macachino eartheats paste or 2 dates and 1 tsp cacao powder, pinch of sea salt, 1 tsp coconut oil, 1 tbsp dark chocolate chips, water if needed

Filling: 1/2 cup soaked cashews, lemon juice from half lemon, ½ cup coconut cream, handful of strawberries (optional)

Instructions: Pulse all crust ingredients in a food processor until well blended. Add some water if the mixture is too dry until it has a sticky texture. Scoop mixture out and form into mini patties. Set aside in the freezer.

Pulse all filling ingredients in a food processor until smooth. Add water if mixture is too thick. Add about 1tbsp of filling onto a pattie, then top off with one another patty to form an oreo. Set aside in freezer. Transfer to fridge 30 minutes before consumption.
