7 Ingredient Low Carb Bread

When I made this bread for the first time, I’ll be honest, I didn’t have high hopes. It was my first time making any type of bread and I really didn’t think this was going to work out.

But damn was I wrong!

This bread is everything I wished for and more!

No joke, guys, this loaf didn’t last long in my house….

Not only is this bread low carb/keto/paleo it is also super filling and nutritious. It gave me so much energy and kept me full for hours with just one slice.

Plus I’m all about those simple recipes that don’t require 3.5 days and 57 ingredients to make!

Good bye bread guilt, forever.

Ingredients

6 tbsps coconut flour
2 cups almond flour
4 eggs
1 tsp xanthan gum
1 tsp baking soda 
1 cup coconut milk
1 tsp coconut oil

Instructions

Preheat oven to 350F. Grease a baking pan with coconut oil and store in the oven for oil to melt.
Grab a bowl and mix the dry ingredients together. Then add the wet ingredients. Mix together well into you reach a sticky consistency. Add more milk if too dry. Transfer mixture to the pan and bake for about 45 minutes or until golden brown.

Optional: As a vegan option, you could try using a chia or flax egg (2 tbsps chia or flax with water) instead of regular eggs.

So you may be wondering how to use this bread.

First off, I love it by itself. But it’s also fantastic with toppings:

  • Nut butter (I use NUIT superfood almond butter)

  • French Toast (toasted the bread then add almond butter + cinnamon + banana slices = heav-en!)

  • Avocado Toast with hemp hearts and sea salt

  • Chia jam (check out my favourite chia jam recipe here )

  • Sardines or mackerel with tahini
