Guilt Free Mac N' Cheese

You know those people who sigh really loudly when you suggest eating healthy? Like it’s painful and unnecessary? I can imagine they must be thinking they have to give up things like pizza and mac n’ cheese….

As if I would be okay living without pizza and mac' n’ cheese! Obviously someone had to do something about this so yes heathy mac n’ cheese is possible. And it’s damn good.

You really can have both. You can have comfort food and the health benefits.

Pumpkin is my favourite fall food as it’s super tasty, versatile, and packed with nutrients! No, pumpkins aren’t just halloween decorations… they are nutritional powerhouses. High in vitamin A, C, & E, they are also rich in fiber and antioxidants, perfect for immune boosting, eye health, blood sugar balancing, and weight management.

Go ahead and enjoy, no guilt needed.

Ingredients

  • 1 cup soaked raw cashews

  • 1 can organic pumpkin puree

  • 4 tablespoons nutritional yeast

  • Pinch of Himalayan salt

  • Pinch of black pepper

  • 1 tsp coconut oil or ghee

  • Pinch of cayenne powder

  • Pinch of ginger powder

  • 1/2 pack of brown rice or quinoa macaroni pasta

  • Fresh basil leaf

Instructions

Blend soaked cashews in food processor until smooth. Add pumpkin puree and spices and blend until creamy. Cook brown rice or quinoa pasta in a boiling pot until al dente. Add sauce to pasta and mix well. Top with nutritional yeast if desired and basil leaf.
